The last few days have been rainy and gray, which by most people’s standards is not a good thing, but I have developed a love of rain since I became a mom. First of all, there’s nothing cozier than a rainy day cuddling inside with the kids, but the real reason I love rainy days is because it means that all outdoor activities are off, and parks and playgrounds just aren’t my thing. Awful, I know, but true. Rainy days means we can cozy up inside, guilt-free. Unfortunately, the more time we spend at home, the worse the house looks, and my list of projects is longer than ever. One week from today, we leave for Illinois for a week, and before we leave, I’d like to:
1. Clean the playroom and pare down its contents
2. Clean my desk area (again)
3. Put away the remaining signs of the recently completed school year
4. Organize some storage closets
5. Clean up the game room/back door/bar room (again)
I’ve also bought a ton of produce, which I have to find a way to use up before the week is over. And I’d like to make a few meals for my husband to have while we are away (the girls and I are going alone). I’ve been doing quite a bit of cooking and baking the last few days. This is what I’ve made:
Spice Muffins (using Arrowhead Mills 7 Grain Hot Cereal)
Cornbread
Greek chicken with lemon, garlic and thyme served with quinoa
Clean Eating Pasta Spinach Rolls with a Tomato Sauce with Turkey – a favorite of the whole family
Chou Fleur au Gratin (a baked cauliflower in bechamel sauce from French Kids Eat Everything) which was out of this world
Over the next few days, the Manley Menu will feature:
Kale Salad
Fruit Salad with Cantaloupes, Mangos, Watermelon, and Grapes
Leek and Pear Soup (from French Kids Eat Everything)
Meatless Thai Chili
Spiced Cucumbers with Coconut Milk
and, of course, Pizza Crust, for my baking challenge… tomorrow, I promise.
Looks like it’s going to be another rainy day. : )
