Yuck! I have a cold. Even more reason to start taking better care of myself. Tomorrow I am going to begin by using my brand new juicer for the first time. I think the whole family could use something quick and portable that is also healthy and will provide nutrients. Eva, my three year old, eats very little but drinks water and milk in massive quantities, so I think I can get her to drink some homemade carrot juice! Here’s the recipe that I will be trying first thing tomorrow morning. I have no experience with juicing yet, but from what I understand this makes one serving:
4 carrots
2 apples
1/4 inch of ginger (I might leave this out of Eva’s serving)
Apparently, it’s amazing for energy, helps fight a cold, and makes your skin smooth and elastic. Can’t wait to try it!
For breakfast, I plan on fixing an egg white omelet with some preserved limes I made a while back from the crop we had this summer. I decided that eating superhealthy will be a lot easier if I made it more convenient and more tempting, by making sure I stock up on the healthy foods I do love. I am not overly excited about omelets, especially an egg white omelet, but if I add a spicy or salty kick, with some feta or the preserved limes or mango chutney, I bet I would like it, so I plan on making that for breakfast tomorrow. I will make oatmeal, one of our staples, for the girls.
And for dinner, I will be making Sweet Potato and Chicken Curry using this recipe from Cooking Light, which, as far as weekday recipes go, falls towards the high end of the spectrum for me. It’s a little more work than I usually make time for on a Monday, but the recipe makes a lot, so I plan on freezing the leftovers immediately to use one night when I don’t have time to cook!
